Kokosanki – Coconut Macaroons
If you enjoy coconut flavoured or coconut-based sweet treats this is a recipe for you to try. Small, crunchy on the outside but airy and soft on the inside cookies which will definitely hit a sweet spot.
These sweet treats are easy to make and one batch will give you a lot of delicious small coconut clouds. They go great with coffee or stronger tea to bring down the sweetness of the cookies. Stored in a tin box with a lid they can hold on very well for a few days.
Kokosanki are quite popular small cookies in Poland. We really make them at home as you can buy them in most of the bakeries or small delis in the neighbourhood. One day I remembered this sweet treat and that I was enjoying them a lot before moving to London. I realised that I actually missed them, so the only right thing to do was to make them.
Kokosanki – Coconut Macaroons
Ingredients
- 200 g Desiccated Coconut
- 50 g Butter
- 3/4 cup Sugar
- 3 tbsp Milk
- 2 Egg Whites
- 1 Pinch of Salt
- 2 tsp Potato Starch can be corn flour
Instructions
- In a small pot melt butter with sugar on small/medium heat. Add milk and take off the heat.
- Add coconut and mix very well making sure all the coconut bits are covered. Set aside to cool down.
- In a big bowl beat the egg whites with a pinch of salt. Add potato starch by the end.
- Add coconut mixture to the egg whites and combine using a spatula. Set aside for a minute to cool down.
- Preheat the oven to 180C and prepare your baking tray by covering it with parchment paper.
- To form the cookies it is best to do it with lightly wet hands. Form small to medium balls and place them on the baking tray living some space in between. Flatten each cookie a bit with your fingers. You should end up with around 28 cookies.
- Bake for 10 to 14 min. Let them cool down before enjoying with a cup of tea or coffee.
