Green Beans with Eggs and Blue Cheese
Ingredients
- 200 g Green Beans
- 2 Eggs
- 50 g Blue Cheese
- 3 Large Garlic Cloves
- 2 tbsp Butter
- Parsley handful
- Salt & Pepper
Instructions
- Wash green beans and place them in a pot with salted water. Bring to simmer and cook until the beans are soft. Strain the beans and set them aside.
- Peel and thinly slice garlic cloves. In a small bowl beat 2 eggs seasoned with pepper, next add crumbled blue cheese and freshly chopped parsley and fold in with the eggs.
- Place the frying pan on the stove on medium heat and melt the butter. Add sliced garlic and green beans. Let it cook for 3 minutes. Pour in the egg and cheese mixture. Cook for 3 to 4 minutes mixing with a spatula. It’s like making a scrambled egg.
- Enjoy as a side or as a lunch with the fresh breed.
