Prawn and Soy Noodles

This slurpy, full of veg, saucy goodness is perfect to end a busy day in the comfort of your home. We also love to make a big batch of these noodles for packed lunch to work. It does not take much time to make it and we can save some coins on takeout in central London where prices are just out of the blue moon.
This recipe is completely versatile. Any veggies and protein will work. It’s also great by the end of the week when you need to clear out your fridge before the next grocery shopping trip.
You can swap prawns to tofu or just completely skip it and make it a simple vegetarian but delicious dish. I use an oyster sauce but if you skip it and add an extra tbsp of soya sauce that will make it vegan. How simple is that?

Prawn and Soy Noodles
Ingredients
- 150 g King Prawns
- 600 g Medium Thick Wheat Noodles
- 1/2 Small Yellow Bell Pepper
- 1/2 Small Orange Bell Pepper
- 1/2 Medium Courgette
- 1 Small Onion
- 2 Large Garlic Cloves
- Spring onion
- Sesame Seeds
For the sauce
- 2 tbsp Light Soya Sauce
- 2.5 tbsp Sesame Oil
- 1 tbsp Oyster Sauce
- 1 tsp Ginger Powder
- 1 tsp Smoked Sweet Paprika
- 0.5 tsp Curry Powder
- 1 tbsp Sriracha optional
- Salt & Pepper to taste
Instructions
- Chop bell peppers and courgette into medium bite-size pieces. Peel and chop onion and garlic into a small cube.
- Heat up 2 tbsp of oil in a deep frying pan. Add onion, garlic, pepper, and courgette. Cook on medium heat for 6 to 10 minutes. Stirring occasionally to make sure nothing will burn.
- Add prawns and all ingredients for the sauce. Give it a mix, cover the pan with a lid, and cook for 4 minutes. Try the sauce and season to taste if needed. Next add noodles, cover with the lid again and give it up to 5 minutes for them to soften up and get loose.
- Once the noodles are nice and lose mix everything gently. Serve in deep bowls. Garnish with sesame seeds and spring onion.
