Algerian Frik Soup

Frik soup also called Chorba Frik is really famous and traditional. Enjoyed mostly during the month of Ramadan with a side of borek. This is one of my most favourite Algerian dishes. Super light and filling.

This recipe is full of vegetables, spices and fresh herbs like mint and coriander. We prepare it only with vegetables without any meat which makes this soup vegan, but it can be of course cooked with lamb or beef chunks. Once it’s cooked and you are ready to eat don’t forget to add a squeeze of fresh lemon juice.

One of the ingredients is brown bulgur which is whole grain wheat. High in protein and fibre and much healthier than brown rice. Love it, as it’s not only a great plant-based, fat-free and delicious recipe but it’s also good for your body. It’s a total win-win.

Ingredients
  

  • 1 Medium Red Onion
  • 1 Medium Courgette
  • 4 Medium Ripe Tomatoes
  • 1 cup Chickpeas from water
  • Fresh Coriander handful chopped
  • Fresh Mint handful chopped
  • 1 tsp Smoked Paprika
  • 1 tbsp Tomato Puree
  • 1/2 tsp Ground Cinnamon
  • 2 tbsp Fine Brown Bulgur

Instructions
 

  • Chop onion, coriander, mint and courgette. Place it in the large pot over medium heat with 2 tbsp of olive oil. Add paprika, tomato paste, cinnamon and a pinch of salt and pepper. Add 1 tbsp of water and cook for around 5 min.
  • Add chickpeas and let it cook for another 5 min. Follow with grated tomatoes and add hot water just to cover all of the veggies. Cook until all vegetables are soft.
  • Meanwhile, wash bulgur wheat, place it in a bowl and cover it with water. Set aside.
  • Once the vegetables are cooked and soft, remove the water from the wheat and add the wheat to the pot. Make sure all the ingredients are covered with water (add if necessary). Let it cook for a further 15 min on medium heat.
  • Enjoy with a side of borek and a squeeze of lemon and fresh coriander.
