Beef Meatballs in Tomato Sauce
There are not many dishes better than a comforting plate of delicious and herby meatballs in beautifully seasoned, thick tomato sauce on top of fluffy and smooth mashed potatoes.
This recipe is just spot on for the autumn-winter season with its heartiness and rustic flavours. I know it does look simple but it tastes incredible and it’s a perfect dish to share with your loved ones.
I absolutely love to make a big batch of those meatballs so I can have the leftovers for lunch at work. It’s like having this cosy/homey feeling away from home for at least a few mouthfuls during a busy day.
Making your own meatballs is super easy and quite fun to roll them up. Make sure to use a fattier mince to keep the meat nice and moist throughout cooking. We will add few spices and herbs to the mix and roll them into small balls. You can make those as big as you want. This recipe will let you choose your base for the sauce. I highly recommend mashed potatoes – for me, it’s an ultimate comfort but you can easily go for pasta, like spaghetti, penne or maybe rice or couscous.
