Chrzanowa (Horseradish Soup)
Delicious and completely out of the box soup proposition for Easter or any other spring day. Horseradish gives this dish a panging and spicy flavour that is not overpowering thanks to eggs, sausage and potatoes. Another polish dish with traditional flavours and ingredients.
This recipe is really simple and quick to execute. One of the best parts is that you can adjust the level of spice to your liking by adding horseradish gradually. I like mine with a bit of punch, so I easily add 4 to 5 tablespoons of horseradish paste. You can use fresh horseradish root, but I tend to go for the jarred version by the polish company – Krakus.
What do we need apart from horseradish? Good quality chicken stock, I highly recommend using homemade, sausages – can be pork, turkey or the best white polish sausage if possible, potato and eggs to garnish. Easy, budget-friendly and extremely satisfying.
Chrzanowa (Horseradish Soup)
Ingredients
- 2 L Chicken Stock
- 1 Medium Potato
- 4 Medium Sausages of your choice
- 2 Bay Leaves
- 4-5 tbsp Horseradish Paste
- Salt & Pepper
Instructions
- Bring chicken stock to simmer and add bay leaves; thickly sliced sausages and potatoes cut into medium cubes. Cover with the lid and simmer on medium-low heat until the potatoes are soft (around 15min).
- Once the potatoes are soft add horseradish paste, 1 tbsp at a time, and add gradually until you are happy with the flavour and the level of spice. Season with salt and pepper.
- Serve with boiled egg cut into quarters and enjoy!
