Creamy Leek & Salmon Traybake
I love traybakes and always try to come up with new recipes or have a look online. When I came across this recipe on the BBC website a few months ago, I had to try it, and now I want you to try it as it’s absolutely delicious.
I have a soft spot for leeks. I must try any dish that includes them. The sweet and oniony taste of this vegetable is just so special and versatile for any type of the main dish, soups, side salads, quiche filing, etc.
We try to include fish and seafood to our diet on a weekly basis as it’s really good for your health, diet, and mental health. Let’s be honest, we also really love it. That’s why we try to plan our holidays to places with good seafood so we can enjoy the freshest and most amazing product.
Creamy leeks and salmon traybake is a great recipe for those lazy days, cozy evenings, or even a date night in for two. A simple yet delicious and not boring at all dish that will satisfy kids and adults. We will roast some potatoes for the side, they will add a nice crunch to the whole dish.
If you are not too keen on salmon, you can easily use a different type of fish. Leeks will work beautifully with cod, haddock, or sea bass.

Creamy Leek & Salmon Traybake
Ingredients
- 350 g Baby Potatoes
- 2 Salmon Filets skinless
- 2 Medium Leeks
- 2 tbsp Olive Oil
- 2 Garlic Cloves
- 100 ml Single Cream
- 1/2 tsp Italian Seasoning
- Fresh Lemon Juice
- Slice of Lemon
Instructions
- Heat the oven to 200C/180C fan. Wash and half the bigger baby potatoes. Toss them with 1 tbsp of olive oil and season with salt, pepper, and Italian seasoning in a baking tray. I like to line my tray with non-stick baking paper.
- Place in the oven and bake for 20min tossing halfway through.
- Meanwhile, slice in half and chop leeks. Give them a wash in a colander and drain the water well. Cook in a deep pan with 1 tbsp of olive oil for 10min. Then add cream, 1 tsp lemon juice, 1 crushed garlic clove, and season to taste with salt and pepper.
- Prepare your fish. Use the knife to cut 3 small pockets than place the garlic slices inside. Season with a pinch of salt and freshly ground pepper. Place half of the fresh lemon on top of each piece of fish.
- Take the potatoes out of the oven and make space in the middle of the tray. Place leeks and top them up with prepared salmon fillets.
- Place in the oven and bake for 7 to 8 min or until just cooked through. Enjoy with a squeeze of fresh lemon juice and a side salad, if you like.
