This is probably one of my most loved salads to just quickly make as a side dish during a busy week as it goes with every meat and fish.

We are going to make it super delicious with just a few ingredients and a great dressing. Make it first before cooking the rest of your planned meal and leave in the fridge for all the flavors to combine. I hope that with this recipe, beetroot will become one of your favorite vegetables as it is super versatile and delicious.

You can buy ready-cooked beetroots which makes life already one step easier not even mentioning that we should have more of this wonderful vegetable in our everyday diet. It is super low in calories but full of magnesium, vitamin B9, and fiber. It helps with blood pressure, may help lose weight, improve digestion, and so on.

So, our conclusion is “Eat more beets y’all!”. Easy.

Ingredients
  

  • 4 Medium Cooked Beets
  • 2 Large Cornichons
  • 1/2 Small Red Onion or white
  • 1 tbsp Mayonnaise
  • 1 tsp Mustard
  • 0.5 tsp Juice of Fresh Lemon
  • Salt & Pepper

Instructions
 

  • Cut beets into medium bite-size pieces and transfer to a bowl.
  • Chop onion and cornichons into a small cube. Add to the beets and mix.
  • Add mayonnaise, mustard, lemon juice, a pinch of salt and pepper. Mix all together well. Give it a try and add more seasoning if needed.
