Healthy No-Bake Oatmeal Cookies
These healthy no-bake oatmeal cookies are perfect for a quick snack and as a dessert when you are trying to lose those extra pounds. They are super easy to make with very few ingredients.
Dark chocolate, peanut butter, and fine coconut flakes make this treat super delicious. You can have the dessert, or a snack sorted in just 30min, which makes this treat also a great idea for meal prep. It’s a great surprise to have them stacked on the back of the fridge when you crave something sweet at any time of the day really.
Why they are healthy, you ask? Well, in this recipe you won’t find white sugar, they are packed with protein from peanut butter, and we will use at least 60% dark chocolate to avoid extra hidden kcals and sugars from milk chocolate. Don’t worry they will still be sweet but in a good and healthy way.
This recipe is made with cupboard staples which you probably already have. So without any further ado let’s gather our ingredients and get to it!
Healthy No-Bake Oatmeal Cookies

- Cupcake liners
Ingredients
- 1 cup Oatmeal
- 0.5 cup Smooth Peanut Butter
- 1/4 cup Muscovado Sugar or maple syrup
- 1/4 cup Coconut Oil measured in solid state
- 1/4 tsp Sea Salt
- 1 tsp Vanilla Extract
- 2 cups Shredded Unsweetened Coconut
- 50 g Dark Chocolate at least 60%
Instructions
- In a medium saucepan combine peanut butter and coconut oil over medium heat. Add muscovado sugar and let it melt stirring constantly over small heat. Do not let it boil. Once well combined take it off the heat.
- Stir in roughly chopped dark chocolate and mix until melted. Add oatmeal, shredded coconut, sea salt, and vanilla extract. Mix well.
- Place 2 tbsp (or 1 ice cream scoop) of the mixture into each cupcake lining. Place on the tray and transfer to the freezer for 15min or until set.
- Store in the fridge or freezer and enjoy them cold once the sweet urge hits you.
