Leczo (Polish Pepper and Sausage Stew)
Slow-cooked pepper stew with polish style sausage in tomato sauce and herbs like paprika that will bring an extra smokiness into the whole dish. Super easy, healthy, and delicious!
A traditional polish dish that took its origins from Hungarian cousin (Lesco). We are not gonna get into a history of true root of leczo here. Let me just tell you it’s worth your time.
Stew recipes like this are one of the easiest and my personal favorites when I’m lazy. No danger of overcooking it, the longer it sits in a pot and slowly bubbles away the better. Just stir it a few times and that’s it! You can’t go wrong here. And everyone will be impressed because of all the stigma around slow cooking that it takes so much effort and time. Ha! No, my friends! But thank you though.

Leczo (Polish pepper and sausage stew)
Ingredients
- 4 Large Peppers yellow, red, green,orange
- 1 Large Courgette
- 1 Large Onion
- 400 g Chopped Tomatoes can
- 2 cups Water
- 200 g Polish Sausage (Kielbasa) or 5 small sausages
- 2 Garlic Cloves
- 1.5 tsp Smoked Paprika Powder
- 1 tsp Hot Smoked Paprika Powder or a pinch of cayenne pepper
- 1 tsp Dried Oregano
- 0.5 tsp Dried Thyme
- 2 Bay Leaves
- 1 tbs Tomato Paste
- Salt & Pepper
Instructions
- Start by cleaning all your vegetables. Cut peppers into slim long strips. Cut the courgette in half diagonally and chop into 0.5 cm thick pieces. Set aside the prepared vegetables
- Chop onion into fine cubes. Slice sausage into 1 cm thick rings
- In a large pot heat up 1 tbs of oil. Add onion and sausage. Cook for 5 to 7 min or until onion is translucent. Toss in peppers and courgette. Mix it evenly and cook on medium heat for a few minutes
- Add tomatoes following with water, tomato paste, bay leaves and all the spices. Crush garlic cloves into the pot. Mix together well and cover. Cook on medium heat for 1.5 to 2 hours stirring occasionally
- Try and season to taste with salt and pepper
- Serve in deep bowls with a fresh baguette on the side
