Spinach & Caramelized Onion Pizza
Ahhhh pizza! I’m hungry only on the thought of this cheesy goodness. One of my absolute favorites on pizza is caramelized onion. I would always order one with this delish topping without even reading the whole menu! It adds this tad of sweetness that is balancing salty cheese and blandness of spinach.
The pizza dough is so simple you will be surprised! It takes almost no effort and you always end up with extra for next time as you can keep the dough in the fridge for up to 7 days. This way you have two dinners sorted.
Same with the caramelized onion if you made a bit too much. It’s great with a folded egg omelet in the morning. Yum!

Spinach & Caramelized Onion Pizza
Ingredients
Pizza dough
- 500 g Flour
- 7 g Dried Yeast
- 325 ml Luke warm Water
- 0.5 tsp Salt
Toppings
- 1 cup Passata
- 2 Medium Red Onions
- 450 g Fresh Spinach
- 100 g Blue Cheese
- Shredded Cheddar Cheese
- 2 Large Garlic Cloves
- 1 tsp Dried Oregano
- 1.5 tbs White Wine Vinegar
- 2 tbs Sugar
- Salt & Pepper
Instructions
- Mix the dried yeast with warm water in a cup and set aside. In a large glass or ceramic bowl combine evenly flour and salt
- Pour the yeast mixture into the bowl with flour and start mixing with your hand. It will be quite sticky, which is what we want. Once you have no dry flour left behind, place the dough onto dusted with flour counter and start kneading. Up to max 5 min. Just until your dough is smooth
- Roll the dough into a log and cut 4 equal pieces (for a large pizza cut in two). Shape each piece to a ball and place it on a tray dusted with flour. Cover with a tea towel. Let it rise in a dry and warm place for at least 2h
- Meanwhile, we will prepare our toppings. Cut the peeled onions in half and chop into 1cm slices. On a frying pan, preheat 2 tbsp of olive oil on medium heat, and start cooking the onions. Once they start being translucent add vinegar and sugar. Let it cook for 5min stirring from time to time. Place in a bowl and set aside
- Add washed spinach gradually into a preheated (medium setting) deep frying pan. Let it cook for 5 to 10 minutes. Add crushed garlic and season with salt and pepper to taste
- In a bowl mix passata with oregano, a pinch of salt and pepper
- Once your dough is ready, preheat oven to 210 degrees Celcius. Stretch your dough into the desired circle size, and place it on a baking tray. Spread tomato sauce on top. Leave a thin rim off the pizza dry. Sprinkle shredded cheese, add spinach, caramelized onion and chunks of blue cheese
- Bake in the oven for 7 to 10 min. All done! Enjoy!
