Sweet & Sour Chicken
Definitely one of the ultimate favorites for takeout. But what if you could make it at home and have a fake-out night with your family or friends?
You will know what ingredients you are putting into this beautiful dish, which makes this bit healthier and a little more guilty free. The satisfaction of hard work with the first bite and smile it will bring to your dinner table is priceless!
This recipe might take a bit of time but it’s really simple to execute. I would cook it only during the weekend on the special request of my house foodie partner in crime. Asian cuisine is one of our favorites. I came up with the need to make my own sweet & sour chicken when I craved it for months and simply couldn’t make time to go to China Town, which is ridiculous as I work 5 min walk away. Well, that’s just me.
Believe me you will be proud of yourself!
Sweet & Sour Chicken
Ingredients
- 800 g Chicken Thighs boneless and skinless
- 0.5 cup Cornflour
- 2 Eggs
- 0.5 cup Chopped Pineapple
- 1 Yellow Bell Pepper
- 1 Small Red Onion
- 2 Garlic Cloves
For the sauce
- 5 tbsp Ketchup
- 5 tbsp Shaoxin Wine
- 2 tbsp Vinegar
- 1 tbsp Oyster Sauce
- 3.5 tbsp Dark Soya Sauce
- 3 tbsp Sugar
- 3 tbsp Water
- 1 tbsp Cornflour
Instructions
- Clean the chicken thighs and cut each one of them into large bite pieces. Season all with a pinch of salt and pepper.
- Heat up 1/3 cup of oil in a large frying pan. Meanwhile, crack and beat the eggs in one plate, pour flour into the second plate. Coat each piece of chicken evenly first in egg and that in cornflour.
- Place the chicken pieces into hot oil and fry 5min on each side. You will probably have to fry your chicken in 2 or 3 batches depending on how big is your frying pan. Let each batch of ready fried chicken soak off any excess oil on a large plate lined with 2 paper towels.
- Chop the onion and the garlic into a small cube. Clean and chop the bell pepper into a large cube.
- In a medium bowl mix all the ingredients for the sauce. Het up a large deep pan with 1 tbsp of oil, add the onion, garlic and bell pepper. Cook for 3 to 5 min and then pour in the sauce and add pineapple chunks. Let in cook on low heat. It doesn’t need long, max 2 to 3 min. Once it will start bubbling, add all of your fried chicken and mix well. Make sure to coat each piece of chicken evenly. Let it cook for 5 min.
- Transfer into a serving bowl. Decorate with sesame seeds and spring onion.
