Green Beans with Eggs and Blue Cheese

Ingredients
  

  • 200 g Green Beans
  • 2 Eggs
  • 50 g Blue Cheese
  • 3 Large Garlic Cloves
  • 2 tbsp Butter
  • Parsley handful
  • Salt & Pepper

Instructions
 

  • Wash green beans and place them in a pot with salted water. Bring to simmer and cook until the beans are soft. Strain the beans and set them aside.
  • Peel and thinly slice garlic cloves. In a small bowl beat 2 eggs seasoned with pepper, next add crumbled blue cheese and freshly chopped parsley and fold in with the eggs.
  • Place the frying pan on the stove on medium heat and melt the butter. Add sliced garlic and green beans. Let it cook for 3 minutes. Pour in the egg and cheese mixture. Cook for 3 to 4 minutes mixing with a spatula. It’s like making a scrambled egg.
  • Enjoy as a side or as a lunch with the fresh breed.
