Wash green beans and place them in a pot with salted water. Bring to simmer and cook until the beans are soft. Strain the beans and set them aside.
Peel and thinly slice garlic cloves. In a small bowl beat 2 eggs seasoned with pepper, next add crumbled blue cheese and freshly chopped parsley and fold in with the eggs.
Place the frying pan on the stove on medium heat and melt the butter. Add sliced garlic and green beans. Let it cook for 3 minutes. Pour in the egg and cheese mixture. Cook for 3 to 4 minutes mixing with a spatula. It’s like making a scrambled egg.
