Instructions
Start by cleaning all your vegetables. Cut peppers into slim long strips. Cut the courgette in half diagonally and chop into 0.5 cm thick pieces. Set aside the prepared vegetables
Chop onion into fine cubes. Slice sausage into 1 cm thick rings
In a large pot heat up 1 tbs of oil. Add onion and sausage. Cook for 5 to 7 min or until onion is translucent. Toss in peppers and courgette. Mix it evenly and cook on medium heat for a few minutes
Add tomatoes following with water, tomato paste, bay leaves and all the spices. Crush garlic cloves into the pot. Mix together well and cover. Cook on medium heat for 1.5 to 2 hours stirring occasionally
Try and season to taste with salt and pepper
Serve in deep bowls with a fresh baguette on the side
Notes
Tip: To make it vegan, just skip the sausage and carry on with the recipe.
