Clean the chicken thighs and cut each one of them into large bite pieces. Season all with a pinch of salt and pepper.
Heat up 1/3 cup of oil in a large frying pan. Meanwhile, crack and beat the eggs in one plate, pour flour into the second plate. Coat each piece of chicken evenly first in egg and that in cornflour.
Place the chicken pieces into hot oil and fry 5min on each side. You will probably have to fry your chicken in 2 or 3 batches depending on how big is your frying pan. Let each batch of ready fried chicken soak off any excess oil on a large plate lined with 2 paper towels.
Chop the onion and the garlic into a small cube. Clean and chop the bell pepper into a large cube.
In a medium bowl mix all the ingredients for the sauce. Het up a large deep pan with 1 tbsp of oil, add the onion, garlic and bell pepper. Cook for 3 to 5 min and then pour in the sauce and add pineapple chunks. Let in cook on low heat. It doesn’t need long, max 2 to 3 min. Once it will start bubbling, add all of your fried chicken and mix well. Make sure to coat each piece of chicken evenly. Let it cook for 5 min.
Transfer into a serving bowl. Decorate with sesame seeds and spring onion.
