Chop bell peppers and courgette into medium bite-size pieces. Peel and chop onion and garlic into a small cube.
Heat up 2 tbsp of oil in a deep frying pan. Add onion, garlic, pepper, and courgette. Cook on medium heat for 6 to 10 minutes. Stirring occasionally to make sure nothing will burn.
Add prawns and all ingredients for the sauce. Give it a mix, cover the pan with a lid, and cook for 4 minutes. Try the sauce and season to taste if needed. Next add noodles, cover with the lid again and give it up to 5 minutes for them to soften up and get loose.
Once the noodles are nice and lose mix everything gently. Serve in deep bowls. Garnish with sesame seeds and spring onion.
