Easy Beetroot Salad
Ingredients
- 4 Medium Cooked Beets
- 2 Large Cornichons
- 1/2 Small Red Onion or white
- 1 tbsp Mayonnaise
- 1 tsp Mustard
- 0.5 tsp Juice of Fresh Lemon
- Salt & Pepper
Instructions
- Cut beets into medium bite-size pieces and transfer to a bowl.
- Chop onion and cornichons into a small cube. Add to the beets and mix.
- Add mayonnaise, mustard, lemon juice, a pinch of salt and pepper. Mix all together well. Give it a try and add more seasoning if needed.
