Drain chickpeas and place in a food processor and whizz until smooth. Add the rest of the ingredients and whizz again until combined. You might need to scrape the edges of the food processor to make sure everything mixed well.
Transfer ready hummus to a serving bowl and place in the fridge to cool down.
Cut the onion in half and chop into 1 cm slices. On a frying pan preheat 1 tbs of olive oil on medium heat, and start cooking the onions. Once they start being translucent add vinegar and sugar. Let it cook for 5-8 min, moving them from time to time.
Once you are ready to serve your hummus, simply decorate with onions and sprinkle some smoked paprika on top. Enjoy with fresh flatbread, tortilla chips, or as a bread spread.
